After starting the Keto way of eating, I really missed my bread, bagels, etc.  Having tried all the different Keto friendly bread recipes including Cloud Bread I found that they were either too complicated or the flavor and texture were so far off that I just gave up.

Then I decided to try cloud bread again and when I made it I made a mistake and put in more cream cheese than the recipe called for.  Boy!  Did that make a difference.

This Cloud Bread is so easy to make and tastes really good.  I usually just put butter and all-fruit jam on them for my everyday meal.  Then when I tried to experiment with other uses for the Cloud Bread and found that adding a little salt to the batter and sprinkling garlic powder (sparingly) on the top was a nice change.

Then when we tried using this Cloud Bread for pizzas it was definitely a hit!  Just add a little pizza sauce then your toppings and the mozzarella on top.  We then popped it in the toaster oven for 10 minutes and they were heavenly without the guilt.

Instructions
  1. Set the oven to 300 degrees.
  2. Take a large cookie sheet and line it with parchment paper.
  3. Use 2 bowls, putting the cream cheese in one.
  4. Separate the eggs putting the yolk in with the Cream Cheese and the whites in the other bowl (make sure you don’t get any yolk in with the whites).
  5. Mix the egg yolks and cream cheese together until creamy.
  6. Add the Cream of Tartar in with the egg whites and with an electric beater mix on medium and then high until there are stiff peaks and if you turn the bowl over the mixture doesn’t fall out.
  7. Slowly add the whites to the yolks and cream cheese a little at a time until all is mixed together.
  8. Spoon mixture out on the parchments paper in six piles, spreading out the mixture until the right size desired. Then go back and add another amount to each of the six until all the mixture is gone.

  9. Bake for 40 minutes.
Recipe Notes

Put out the cream cheese about an hour early so it will be soft and easy to mix. Bake for 40 minutes but check them, you may have to cook for 41 or 42 minutes.  They should be a golden brown on top. This recipe has per each cloud bread: 8.5 grams of Fat <1 gran cholesterol 105 calories
