Keto…what to eat
It’s been a month since I started Keto and even the smell of bacon turns me off (my husband likes to cook it). So, Keto what to eat.
6/6/18 Loss: 12.8 lbs.
I was always a bread, donuts, bagels, pasta, anything with flour person so it has been a real challenge for me. So how do I eat?
They say that there are all kinds of recipes on the internet that is keto but all of the bread and pancake, etc. recipes just don’t do it for me. So what do I do? Do without!
I just eat food that is allowed on Keto that I used to like, and I don’t substitute the Keto way with what I ate of flour stuff before. I’m sure there are a lot of people out there that are happy with the substitutes thinking that since this is a lifestyle that they will continue all their lives they may as well get used to the substitutes. You may feel that way too but I would rather do without. BBQ chicken is my favorite.
This week’s meals:
Wednesday (I go Wednesday to Wednesday since what is when I started)
Breakfast – Bulletproof Coffee
Dinner – BBQ Chicken Thighs under the broiler & roasted asparagus
Thursday
Breakfast – Bulletproof Coffee
Dinner – Tuna salad with two hard-boiled eggs, pickles’ and mayo mixed in
Friday
Breakfast – Bulletproof Coffee
Dinner – Fried pork chop with a salad of cucumbers, tomatoes and ranch dressing
Saturday
Breakfast – Bulletproof Coffee
Dinner – BBQ Chicken Thighs under the broiler with unsweetened applesauce (I add cinnamon and it tastes better since you can’t have the sugar)
Sunday
Breakfast – Bulletproof Coffee
Dinner – Shrimp fried with Kerry Gold butter over a bed of Spaghetti squash then covered with my special Thyme sauce (recipe below)
Monday
Breakfast – Bulletproof Coffee
Dinner – BBQ Chicken Thighs under the broiler, small green salad with ranch dressing
Tuesday
Breakfast – Bulletproof Coffee
Dinner – Fish cooked in my special Thyme sauce with roasted asparagus
As you can see I love BBQ Chicken under the broiler, it is so easy to fix and taste soooo good.
They say that if you do intermittent fasting you don’t have to be so strict on the Keto. I have found that that is true. I know that I stay in ketosis even though I cheat a little and I am still losing weight steadily.

Vermouth Thyme Sauce
2 tablespoons butter
1 tablespoon Swerve
6 Green Onions, thinly sliced crosswise (white and pale green parts only)
1 teaspoon dried thyme, crumbled
1/2 cup whipping cream
1/4 cup dry vermouth
The green onion tops cut into 1-inch lengths
In a large skillet Melt two tablespoons of butter over medium heat. Add sliced green onions and sprinkle with swerve and thyme. Lightly salt and pepper. Saute 5 minutes. Pour whipping cream and vermouth over the green onions. Reduce heat and cover and cook about 10 minutes, stirring occasionally
Boil sauce until slightly thickened, about 3 minutes. Put over chicken, fish, shrimp or any other type of meat you have. Garnish with green onion tops. This sauce is very rich and you should use it sparingly.
You can substitute leeks for green onions and cook the fish in the sauce.
